LEMON MINT SQUASH

A few weeks ago, we had a request for a spring mocktail.  We chose Beach Bum Berry's Lemon Mint Squash (due to our love of tiki drinks), and today we're passing that recipe on to you.  

Keep reading for a fun non-alcoholic beverage to liven up your Tuesday afternoon.

STEP 1:  LEMON MINT SYRUP
(MAKES 1 PINT)

1 CUP SUGAR
1 CUP FRESH LEMON JUICE
ZEST OF 4 LEMONS
50 FRESH MINT LEAVES

simmer ingredients over medium heat
remove from heat and cover for 15 minutes
strain into a bottle through a fine mesh sieve

STEP 2: THE MOCKTAIL

1 1/2 OZ. LEMON MINT SYRUP
4 OZ. CLUB SODA
DASH OF ANGOSTURA BITTERS
